    • 1 medium-sized cauliflower, grated
    • 1 cup extra-firm tofu, pressed and diced
    • 1 cup mixed vegetables (carrots, peas, corn, bell peppers), diced
    • 3 green onions, chopped
    • 3 cloves garlic, minced
    • 2 tablespoons soy sauce (low-sodium)
    • 1 tablespoon sesame oil
    • 1 tablespoon vegetable oil
    • 1 teaspoon ginger, grated
    • Salt and black pepper to taste
    • Sesame seeds and chopped cilantro for garnish (optional)

    Cooking Instructions:

    1. Preparing Cauliflower Rice:

    • Grate the cauliflower using a box grater or a food processor until it resembles the texture of rice.

    2. Pressing Tofu:

    • Wrap the tofu in a clean kitchen towel and press to remove excess moisture.
    • Dice the pressed tofu into small cubes.

    3. Sautéing Tofu:

    • Heat vegetable oil in a large skillet or wok over medium heat.
    • Add diced tofu and cook until golden brown on all sides.
    • Remove tofu from the skillet and set aside.

    4. Stir-Frying Vegetables:

    • In the same skillet, add a bit more oil if needed.
    • Sauté garlic, ginger, and green onions until fragrant.
    • Add mixed vegetables and stir-fry until they are tender-crisp.

    5. Adding Cauliflower Rice:

    • Incorporate the grated cauliflower into the skillet.
    • Stir-fry for 4-5 minutes until the cauliflower is cooked but still has a slight crunch.

    6. Combining Tofu and Seasoning:

    • Return the cooked tofu to the skillet.
    • Pour soy sauce and sesame oil over the cauliflower rice and tofu mixture.
    • Mix well to combine.

    7. Adjusting Seasoning and Serving:

    • Season with salt and black pepper to taste.
    • Garnish with sesame seeds and chopped cilantro if desired.
