    Grilled Chicken Salad with Mixed Greens and Balsamic Vinaigrette

    Savor the fresh and vibrant flavors of our Grilled Chicken Salad, a delightful medley of tender grilled chicken, crisp mixed greens, and a luscious Balsamic Vinaigrette. This salad is a perfect harmony of textures and tastes, offering a light and satisfying meal that’s ideal for any occasion. Whether you’re seeking a healthy lunch or a flavorful dinner, this dish promises a burst of deliciousness with every bite.

    Ingredients:

    For the Grilled Chicken:

    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • Salt and black pepper to taste

    For the Salad:

    • 6 cups mixed salad greens (lettuce, spinach, arugula, etc.)
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, sliced
    • 1/2 red onion, thinly sliced
    • 1/4 cup feta cheese, crumbled (optional)
    • 1/4 cup sliced black olives (optional)

    For the Balsamic Vinaigrette:

    • 1/4 cup balsamic vinegar
    • 1/3 cup extra-virgin olive oil
    • 1 tablespoon Dijon mustard
    • 1 clove garlic, minced
    • 1 teaspoon honey
    • Salt and black pepper to taste

    Cooking Instructions:

    1. Grilling the Chicken:

    • Preheat the grill or grill pan over medium-high heat.
    • In a small bowl, combine olive oil, garlic powder, dried oregano, salt, and black pepper to create a marinade.
    • Brush the chicken breasts with the marinade on both sides.
    • Grill the chicken for 6-8 minutes per side or until fully cooked, with grill marks appearing.
    • Allow the chicken to rest for a few minutes before slicing it into thin strips.

    2. Assembling the Salad:

    • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and black olives.

    3. Making the Balsamic Vinaigrette:

    • In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, honey, salt, and black pepper until well combined.

    4. Tossing the Salad:

    • Drizzle the Balsamic Vinaigrette over the salad.
    • Gently toss the salad to ensure an even coating of the dressing.
