    • 1 cup dry green or brown lentils, rinsed and drained
    • 1 onion, diced
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 3 cloves garlic, minced
    • 1 can (14 oz) diced tomatoes
    • 6 cups vegetable broth
    • 2 cups fresh spinach, chopped
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon dried thyme
    • Salt and black pepper to taste
    • Olive oil for sautéing
    • Lemon wedges for serving (optional)

    Cooking Instructions:

    1. Sautéing Vegetables:

    • In a large pot, heat olive oil over medium heat.
    • Sauté onions, carrots, and celery until softened, about 5 minutes.
    • Add minced garlic and continue to sauté for an additional 1-2 minutes.

    2. Adding Lentils and Spices:

    • Stir in the rinsed lentils, ground cumin, smoked paprika, dried thyme, salt, and black pepper.
    • Cook for 2-3 minutes to toast the spices.

    3. Pouring Broth and Adding Tomatoes:

    • Pour in the vegetable broth and add the diced tomatoes (with their juice).
    • Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes or until lentils are tender.

    4. Incorporating Spinach:

    • Add chopped spinach to the soup and cook until wilted.

    5. Adjusting Seasoning and Serving:

    • Taste and adjust the seasoning if needed.
    • Serve the Lentil Soup hot, optionally garnished with a squeeze of lemon.
