    • 1 cup quinoa, rinsed

    Cooking Instructions:

    1. Cooking Lentils and Quinoa:

    • In a large pot, heat olive oil over medium heat.
    • Add chopped onion and garlic, and sauté until translucent, about 5 minutes.
    • Add diced carrot and celery, and cook for another 3-4 minutes.
    • Stir in rinsed lentils, quinoa, vegetable broth, water, bay leaf, dried thyme, salt, and black pepper.
    • Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils and quinoa are tender.

    2. Adding Kale:

    • Once the lentils and quinoa are cooked, stir in chopped kale and simmer for an additional 5 minutes until the kale is wilted.

    3. Adjusting Seasoning:

    • Taste the soup and adjust seasoning with salt and black pepper if needed.

    4. Serving:

    • Ladle the Quinoa and Lentil Soup with Kale into bowls.
    • Garnish with fresh parsley if desired.
