    Quinoa Salad with Avocado, Black Beans, and Corn

    Embark on a journey of vibrant flavors and wholesome goodness with our Quinoa Salad featuring creamy avocado, hearty black beans, and sweet corn. This refreshing and protein-packed salad is a celebration of textures and colors, combining fluffy quinoa with crisp vegetables and a zesty lime dressing. Whether enjoyed as a light lunch or a side dish, this nutritious salad is a delightful way to fuel your body with essential nutrients and savor the taste of fresh ingredients.

    Ingredients:

    For Quinoa Salad:

    • 1 cup quinoa, rinsed and cooked
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 cup corn kernels (fresh or frozen, thawed)
    • 1 ripe avocado, diced
    • 1 red bell pepper, diced
    • 1/2 red onion, finely chopped
    • 1/4 cup fresh cilantro, chopped

    For Lime Dressing:

    • 3 tablespoons olive oil
    • 2 tablespoons fresh lime juice
    • 1 teaspoon honey or agave syrup
    • 1 teaspoon ground cumin
    • Salt and black pepper to taste

    Cooking Instructions:

    1. Cooking Quinoa:

    • Rinse quinoa under cold water.
    • In a saucepan, combine 2 cups of water and quinoa. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed.
    • Fluff quinoa with a fork and let it cool.

    2. Preparing Salad:

    • In a large bowl, combine cooked quinoa, black beans, corn, diced avocado, diced red bell pepper, chopped red onion, and fresh cilantro.

    3. Making Lime Dressing:

    • In a small bowl, whisk together olive oil, fresh lime juice, honey or agave syrup, ground cumin, salt, and black pepper.

    4. Combining and Tossing:

    • Pour the lime dressing over the quinoa salad.
    • Gently toss the salad until all ingredients are well coated with the dressing.

    5. Adjusting Seasoning and Chilling:

    • Taste and adjust salt and pepper if needed.
    • Cover the bowl and refrigerate the quinoa salad for at least 30 minutes to allow flavors to meld.

    6. Serving:

    • Serve the chilled Quinoa Salad with Avocado, Black Beans, and Corn.
    • Garnish with additional cilantro if desired.
