    • 2 large red bell peppers, halved and seeds removed
    • 1 cup dry red lentils, rinsed and drained
    • 1 large onion, diced

    • 1 can (14 oz) diced tomatoes
    • 4 cups vegetable broth
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon dried thyme
    • Salt and black pepper to taste
    • Olive oil for roasting

    For Garnish:

    • Fresh cilantro, chopped
    • Greek yogurt or sour cream (optional)

    Cooking Instructions:

    1. Roasting Red Peppers:

    • Preheat the oven broiler.
    • Place red pepper halves on a baking sheet, skin side up.
    • Drizzle with olive oil and broil for 8-10 minutes or until the skin is charred and blistered.
    • Remove from the oven, let cool, and peel off the skin. Chop the roasted red peppers.

    2. Cooking Lentils:

    • In a large pot, combine red lentils, diced onion, minced garlic, diced tomatoes, vegetable broth, cumin, smoked paprika, coriander, dried thyme, salt, and black pepper.
    • Add the chopped roasted red peppers to the pot.
    • Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.

    3. Blending Soup:

    • Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth. Be cautious with hot liquids.

    4. Adjusting Seasoning:

    • Taste the soup and adjust seasoning if needed. Add more salt, pepper, or spices according to your preference.

    5. Serving:

    • Garnish with chopped fresh cilantro and a dollop of Greek yogurt or sour cream if desired.
