    • 1 tablespoon sesame oil

    • 1 tablespoon maple syrup or agave nectar
    • 1 tablespoon fresh ginger, minced
    • 2 cloves garlic, minced
    • 1 tablespoon cornstarch
    • 2 tablespoons vegetable oil (for stir-frying)

    For Stir-Fry Vegetables:

    • 1 cup broccoli florets
    • 1 bell pepper, thinly sliced
    • 1 carrot, julienned
    • 1 cup snap peas, trimmed
    • 1 cup cabbage, thinly sliced

    For Brown Rice:

    • 1 cup brown rice
    • 2 cups water
    • Pinch of salt

    For Garnish:

    • Sesame seeds
    • Green onions, sliced

    Cooking Instructions:

    1. Preparing Sesame Ginger Tofu:

    • In a bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, minced ginger, minced garlic, and cornstarch to create the marinade.
    • Add cubed tofu to the marinade, ensuring each piece is coated. Let it marinate for at least 30 minutes.

    2. Cooking Brown Rice:

    • Rinse the brown rice under cold water.
    • In a saucepan, combine brown rice, water, and a pinch of salt.
    • Bring to a boil, then reduce heat, cover, and simmer for 40-45 minutes or until rice is tender and water is absorbed.

    3. Stir-Frying Tofu:

    • Heat vegetable oil in a large wok or skillet over medium-high heat.
    • Add marinated tofu and stir-fry until golden brown on all sides.

    4. Adding Vegetables:

    • Add broccoli, bell pepper, carrot, snap peas, and cabbage to the wok. Stir-fry for an additional 5-7 minutes or until vegetables are tender-crisp.

    5. Combining Tofu and Vegetables:

    • Mix the stir-fried tofu and vegetables together, ensuring they are evenly coated with the sesame ginger sauce.
