    Shrimp and Broccoli Stir-Fry with Quinoa

    Elevate your dinner with a burst of flavors in our Shrimp and Broccoli Stir-Fry with Quinoa. This wholesome dish combines succulent shrimp, crisp broccoli, and nutty quinoa, all brought together with a savory stir-fry sauce. Each bite is a perfect balance of protein, fiber, and vibrant vegetables, making it a nutritious and satisfying option for a quick and delicious meal.

    Ingredients:

    For the Stir-Fry:

    • 1 lb large shrimp, peeled and deveined
    • 2 cups broccoli florets
    • 1 bell pepper, thinly sliced
    • 1 carrot, julienned
    • 3 cloves garlic, minced
    • 1 tablespoon ginger, grated
    • 2 tablespoons soy sauce (low-sodium)
    • 1 tablespoon oyster sauce
    • 1 teaspoon sesame oil
    • 1 tablespoon vegetable oil
    • Sesame seeds and green onions for garnish (optional)

    For the Quinoa:

    • 1 cup quinoa, rinsed
    • 2 cups water
    • Salt to taste

    Cooking Instructions:

    1. Cooking Quinoa:

    • In a saucepan, combine quinoa, water, and a pinch of salt.
    • Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and water is absorbed.
    • Fluff with a fork and set aside.

    2. Preparing Shrimp:

    • In a bowl, combine shrimp with minced garlic, grated ginger, soy sauce, and oyster sauce. Let it marinate for 10-15 minutes.

    3. Stir-Frying Vegetables:

    • Heat vegetable oil in a wok or large skillet over medium-high heat.
    • Add broccoli, bell pepper, and julienned carrot.
    • Stir-fry for 3-4 minutes until vegetables are crisp-tender.
    • Remove the vegetables from the wok and set aside.

    4. Cooking Shrimp:

    • In the same wok, add a bit more oil if needed.
    • Add marinated shrimp and stir-fry for 2-3 minutes until they turn pink and opaque.

    5. Combining and Saucing:

    • Return the cooked vegetables to the wok with the shrimp.
    • Add sesame oil and toss everything together.
    • Adjust seasoning if necessary.

    6. Serving:

    • Serve the Shrimp and Broccoli Stir-Fry over a bed of cooked quinoa.
    • Garnish with sesame seeds and chopped green onions if desired.
