    Embark on a journey of flavors with our Sweet Potato and Chickpea Curry—a hearty and aromatic dish that brings together the natural sweetness of sweet potatoes and the nutty goodness of chickpeas, all enveloped in a fragrant curry sauce. This vegan-friendly curry is a celebration of wholesome ingredients and exotic spices, creating a satisfying and nutritious meal that’s perfect for any day.     Ingredients:

    • 2 large sweet potatoes, peeled and diced
    • 1 can (15 oz) chickpeas, drained and rinsed
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 1 can (14 oz) diced tomatoes
    • 1 can (14 oz) coconut milk
    • 1 cup vegetable broth
    • 2 tablespoons curry powder
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon turmeric
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • Salt and black pepper to taste
    • 2 tablespoons vegetable oil
    • Fresh cilantro for garnish (optional)
    • Cooked basmati rice for serving

    Cooking Instructions:

    1. Sautéing Aromatics:

    • In a large pot, heat vegetable oil over medium heat.
    • Add chopped onions and sauté until translucent.
    • Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    2. Adding Spices:

    • Stir in curry powder, ground cumin, ground coriander, turmeric, cayenne pepper, salt, and black pepper. Cook for 2 minutes to toast the spices.

    3. Cooking Sweet Potatoes and Chickpeas:

    • Add diced sweet potatoes and chickpeas to the pot, stirring to coat them with the spices.
    • Pour in diced tomatoes, coconut milk, and vegetable broth. Mix well.

    4. Simmering the Curry:

    • Bring the mixture to a boil, then reduce the heat to simmer.
    • Cover the pot and let it simmer for 20-25 minutes or until the sweet potatoes are tender.

    5. Adjusting Seasoning and Serving:

    • Taste and adjust the seasoning as needed.
    • Serve the Sweet Potato and Chickpea Curry over cooked basmati rice.
    • Garnish with fresh cilantro if desired.
