    Ingredients:

    For Teriyaki Marinade:

    • 1/4 cup soy sauce
    • 2 tablespoons honey or maple syrup
    • 2 cloves garlic, minced
    • 1 tablespoon rice vinegar
    • 1 tablespoon sesame oil
    • 1 teaspoon grated ginger
    • 1 tablespoon cornstarch (optional, for thickening)

    For Skewers:

    • 14 oz (400g) firm tofu, pressed and cubed
    • 2 bell peppers, cut into chunks
    • 1 zucchini, sliced into rounds
    • 8 oz (225g) mushrooms, halved
    • 1 onion, cut into chunks
    • Wooden skewers, soaked in water for 30 minutes

    Cooking Instructions:

    1. Making Teriyaki Marinade:

    • In a small bowl, whisk together soy sauce, honey or maple syrup, minced garlic, rice vinegar, sesame oil, and grated ginger until well combined. If desired, whisk in cornstarch to thicken the marinade.

    2. Marinating Tofu and Vegetables:

    • Place cubed tofu and chopped vegetables in a large shallow dish or resealable plastic bag.
    • Pour the teriyaki marinade over the tofu and vegetables, making sure they are evenly coated. Allow to marinate in the refrigerator for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.

    3. Preparing Skewers:

    • Preheat the grill to medium-high heat.
    • Thread marinated tofu and vegetables onto the soaked wooden skewers, alternating between tofu and vegetables.

    4. Grilling Skewers:

    • Lightly oil the grill grates to prevent sticking.
    • Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the tofu is lightly browned and the vegetables are tender.

    5. Glazing with Teriyaki Sauce:

    • During the last few minutes of grilling, brush the skewers with additional teriyaki sauce for extra flavor.

    6. Serving:

    • Once cooked, remove the skewers from the grill and transfer them to a serving platter.
