    • 1 block (14 oz) firm tofu, pressed and cubed
    • 1 cup cauliflower florets
    • 1 cup broccoli florets
    • 1 carrot, sliced
    • 1 bell pepper, sliced
    • 1 cup green beans, trimmed and halved
    • 1 can (14 oz) chickpeas, drained and rinsed
    • 1 onion, finely chopped
    • 3 cloves garlic, minced
    • 1 tablespoon ginger, grated
    • 2 tablespoons curry powder
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1 can (14 oz) coconut milk
    • 1 cup vegetable broth
    • Salt and black pepper to taste
    • 2 tablespoons vegetable oil
    • Fresh cilantro for garnish
    • Cooked rice for serving

    Cooking Instructions:

    1. Preparing Tofu:

    • Press the tofu to remove excess water and cut it into cubes.

    2. Sautéing Aromatics:

    • In a large pot or deep skillet, heat vegetable oil over medium heat.
    • Add chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.

    3. Creating Curry Base:
