    Zucchini Noodles with Pesto and Cherry Tomatoes

Ribbons of zucchini noodles are delicately coated in a basil pesto sauce, then tossed with burst-in-your-mouth cherry tomatoes. This low-carb, gluten-free delight is not only a feast for the eyes but also a treat for your taste buds. Enjoy a guilt-free, nutrient-packed meal that’s as easy to make as it is delightful to eat.

    Ingredients:

    • 4 medium zucchini, spiralized into noodles
    • 1 cup cherry tomatoes, halved
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup fresh basil leaves
    • 1/3 cup pine nuts
    • 2 cloves garlic, peeled
    • 1/2 cup extra-virgin olive oil
    • Salt and black pepper to taste
    • Crushed red pepper flakes for a hint of spice (optional)

    Cooking Instructions:

    1. Making Pesto:

    • In a food processor, combine fresh basil, pine nuts, garlic, and Parmesan cheese.
    • Pulse until finely chopped.
    • With the processor running, slowly pour in the olive oil until the mixture forms a smooth pesto sauce.
    • Season with salt and black pepper to taste. Set aside.

    2. Preparing Zucchini Noodles:

    • Spiralize the zucchini into noodles using a spiralizer.
    • In a large pan, heat a bit of olive oil over medium heat.
    • Add zucchini noodles and sauté for 2-3 minutes until just tender.
    • Drain excess liquid from the noodles.

    3. Tossing with Pesto and Cherry Tomatoes:

    • In the same pan, add the prepared pesto to the zucchini noodles and toss until evenly coated.
    • Add halved cherry tomatoes and continue to toss for an additional 2 minutes, allowing the tomatoes to soften slightly.

    4. Serving:

    • Transfer the Zucchini Noodles with Pesto and Cherry Tomatoes to serving plates.
    • Garnish with additional Parmesan cheese, fresh basil leaves, and a sprinkle of crushed red pepper flakes if desired.
